Summer in Review

It’s been an amazing, fun, whirlwind of a summer and I cannot even begin to describe how much I’m missing all my dear friends, family, and most of all my big sissy, Rachel. It’s so hard having to leave everything & everyone knowing that it’ll be a whole year before I’ll see them again. However, I know the memories I make each summer will stick with me for a lifetime.
I’ll always cherish the many golf cart rides I had with my cousin Grace. And, I’ll never forget the drive in movie I watched with my South Dakota cousins, Bethany and Christian. haha and I definitely won’t forget the consequences of losing a race down to the lake at my Grandma’s house; a soaking pair of clothes and wet hair!

Life will constantly present us with complicated and difficult situations but I think during these situations the most important thing to remember is that God has a plan. He knows why, how, and when everything will be sorted out. I guess what I’m saying is, Leave it up to God, He’ll take care of it all.

Bucket List: Celebrating Local Friendships

Maddie-

We missed you this evening at our get-together with the Chin family. With an aura of celebrating relationships felt throughout the afternoon, I dearly missed you.

I was invited to share some baking techniques with Sister Cai and her husband to give them time together and a shared pursuit. I so enjoyed teaching and guiding them through the process of making chocolate cupcakes.

After a successful turnout, we topped the freshly baked cake with dollops of whipped cream. You know I love it when a sweet treat is thrown together in a completely natural way.

What started out as a cupcake-baking lesson turned into a Chinese cookout with our Uncle and Auntie Cai. We grilled meats of all shapes and sizes: lamb, shrimp, and fish skewers, grilled beef steak, and even a delicious rotisserie chicken in the oven!

We made a huge dent in my bucket list today. What fun.

Trip to HK

I’m in HongKong for the weekend! Leaving China next year for University, I wanted to make some long-lasting memories in my favorite city of all time– not to mention I get to spend 4 whole days with my best friend.

My first night in HK was spent helping Michael finish his semester at Hong Kong University. His final architecture portfolio was due Thursday at noon- unfortunately it took an all-nighter to complete the project >.< we tried in vain to beat the rising sun and get into bed before dawn.

It was so worth it though. Michael’s portfolio is excellent, I’m so proud of him!

I made him a “home-cooked” brunch of bread, cheese, avocado and black coffee after we handed in his portfolio.

To rest up a bit, we napped and watched BBC’s Life nature documentaries. Later last night we walked around HK, ate Malaysian curry and Kaya-butter-toast for dinner, and visited a world-traveling, gigantic Ducky.

Shake it Bom Bom!

To all my food fanatic sisters: Off to meet Bianca today in Admiralty (buzzing hub of business, shopping and food, just one stop from central). I have to say, this place really provokes my weakness for all things over-designed, trendy, and ultra expensive.. On a more positive note about the outing-not only does the restaurant bring a level of nostalgia-I know Simply Life is one of Rachel’s and mom’s favorites in Hong Kong, but also meeting a dear family friend touches that soft spot for my family love.

As I roamed through the racks of lace, neon pinks, and over priced hello kitty dolls, what music was playing, but the very same “Science Fair Theme Song”: Bom Bom by Sam and The Womp! Immediately, I thought of Jessie and Maddie and the crazy nights spent prepping for their third place overall at the China-wide Intel Science Fair. (Great job by the way girls!! So proud of you and ready for some detoxed micro-environments!)

Last night I was also listening to a song that reminded me of you crazy girls-Shake It Out by Florence and The Machine. I remember discussing the lyrics with Rachel and singing it all over the house last time I was in Tianjin.

(Can I just have all of you girls back here in HK for some Simply Life with Bianca and me??)

So I was just thinking.. Any of you up for a challenge? What a better way to connect than singing.. And with our music addictions, I wanted to cover one of these two (or both? Mash up??).

Reaching Out on Valentine’s Day

For Valentine’s Day this year, Jessie, Maddie, and I, invited some friends over for flower arranging and some much needed spring-time festivities. It took a full two days to prepare for this get-together. The first day was spent traveling around 天津 looking for materials, buying flowers, and finalizing snack menu ideas. We then spent the actual morning of the party; cleaning a very cluttered house, assembling a cake (most of the hard work was done the night before), and arranging table settings. Of course my favorite part of the preparations, was to bake the Valentine’s cake… second to that, I enjoyed setting out flowers (in preparation for the bouquets), as well as decorating the table with candy and anything rosie&pink.

I loved watching the creativity flow throughout this flowery project. Watching the unique style of each individual was so enchanting- their personalities were expressed through such distinct and beautiful technique.

The lesson I learned through this, was to host more than just one or two gatherings a year! Its not until I am in the midst of something like this, that I realize how much fun I am having. Spending time in fellowship with friends (outside of school and mandatory events) is more important than I often give credit. Ask Jessie, Maddie, or Michael and you will know that I am terrible at hosting events and am often not willing to get out and socialize much. Seriously, I am such a home-body.

and let me just say that Jessie and Maddie are such pleasant people to collaborate with on these type of things…

I so didn’t deserve to be blessed with such precious sisters. Jessie inspires me to forget myself and dive into adventures with hard work and lots of prayer! She is honestly the hardest working person I have ever met… she will be a treasure to her future boss 😉 Maddie is completely un-phased by life’s troubles, she lets go and enjoys life… free to be herself. I wish I had her confidence and spirit! Hosting this party with these two was delightful.

Red-Velvet Valentine’s Day Cake

Yes, I know its been a month since Valentine’s Day but to be honest, I couldn’t pass up this post no matter how late. I am putting it out there as the best tasting cake that I’ve ever made. It couldn’t of come at a better time either, as baking is my #1 method of showing my affection (which is what V-day is all about, right?).

There were many “firsts” for me in baking this cake, it was my first try at: red velvet cake, a 6-layer cake, filling with whipped cream… my first successful piping experience, the first cake that I’ve made for a specific occasion other than a birthday, to Megan’s delight, my first time using the cake plate she bought me for Christmas, and last but not least, the first cake that I’ve properly hoarded all for myself!

The reason I enjoyed this particular cake so much is its unique combination of flavors. As is tradition for a red-velvet cake, there is a cream cheese based filling which then alternates with a pink-colored, vanilla whipped cream. Covering the outside of this cake, is possibly the best chocolate icing I have ever tasted. However, the prize-winning factor has to do with the original nature of red-velvet cake. Unlike many cakes that I bake, this cake is “not” overwhelmingly CHOCOLATE… red-velvet cake is no more than a vanilla cake with a bit of added cocoa and a bunch of red food coloring. Hence, the ratio of vanilla to chocolate is just right.

Preparing for Thanksgiving

This year we are celebrating Thanksgiving a couple days late because Jessie was in Singapore on Thursday attending a Model United Nations (MUN) conference. We simply could not celebrate Thanksgiving without her so while everyone else is getting out their christmas trees and listening to favorite, holiday music, we are still seasoning our Turkey. Although I’m not crazy about cooking I enjoy being around the bustle and hustle of meal preparations. I love the ambiance created when the fragrance of baking pumpkin pie drifts through the house, when Rachel and Mom tie their aprons to begin our feast, and when Megan and I can snuggle up with pumpkin lattes to watch a movie. What would Thanksgiving be without these?

Stuffing, devilled Eggs, and roasted turkey only comes once a year and I am determined to enjoy every bit of it!

Autumn Fest 02 (Maddie)

With my newfound photo blog obsession, I was MORE than ready for day 2! I have a feeling Rachel knew that I would love completing this activity!

To me all the pictures above scream JESSIE. From the beautiful lace shirt, to the Twinings tea box, these photos totally encompass Jessie’s personality.

For example, the first picture, “there’s no other like you” reminds me of how confident Jessie is and how she’ll defend her ideals to the very end (no matter how strange :). This attribute urges me to stop doubting and start living OUT LOUD! The photo of Iced Coffee comes from our Latte dates in our favorite Cafe & Bakery, Paris Baguette. These five pictures only just begin to describe the sweet, positive, and encouraging sister Jessie is. Thanks for being unique. <3

As for Rachel’s 5 pictures, I had a hard time finding the right ones, but I finally picked a few that really impersonate her character in my eyes…

Rachel has always been the “calm” half of us and I really appreciated that aspect of her. Though she doesn’t respond too well to my LOUD laughter and MASSIVE hugs, I know she will be there for me in other ways 🙂

The Anne of Green Gables shot above is one of my favorites, this movie never gets old for Rachel and I! While in the process of tumblr searching, I had this Starbucks image in the back of my mind… where would Rachel be without her Starbucks runs?! It amazes me how much time she can spend sitting in a Coffee shop; reading, working, or chatting 🙂 Rachel, you’ve always been able to encourage and love me when things are rough, your peaceful spirit is a true blessing in my life. I love you!

Autumn Fest 02 (Rachel)

Activity for Day Two: “each person must find five photos which remind them of the other [in my case 2] group members.”

What an amazing way to illustrate (literally!) how I view my sisters. At first it seems obvious… of course they know how I see them- we’ve slept in the same room for how many years now? But its not always that simple. Sometimes the way we view ourselves is much different than the way others see us from the outside.

That’s what made this activity so interesting.

I searched around ~~several hours trying in vain not to get distracted~~ for a while on tumblr blogs until I pinned down just “five” pictures that impersonated Jessie and Maddie in my mind.

Maddie, you were so much more difficult to find pictures for than I expected! In the end I chose photos that I was positive you’d like (sorry no risks there). Believe it or not, you are a mystery to me. For example, when I think you’ll love what I bake, you end up politely eating a few bites before handing it off to Megan. When I’m positive that you’ll absolutely hate a dessert, you love it! Seriously, what’s up with that?!

Though there are some aspects of your person that baffle me (and I’m planning on taking you out for a LONG explanation of this), I am certain about a few things. For one, you are THE most amusing yet laid back person I’ve met. My life would be boring and uneventful without your (often foreign-accented) jokes, randomly executed back hugs, and queer obsession with fried rice in the mornings. Thanks for being so uniquely awesome.

Jessie, you have such an adventurous attitude matched with great sensitivity. For that reason (and for the fact that spending time with you is one of my “favorite” past times), I chose images of places that I want to visit with you. A rustic cabin in the mountains, a lovely picnic on a trip to France, coffee and tiramisu in a coffee shop in Korea- I can’t think of anyone besides you who I’d ask to be my world traveling buddy! Some day it will happen 🙂

Tumblr Finds

Let’s face it, would you rather read a Tumblr photo blog or a Biology text book? It’s pretty much a no brainer… If you’re ever looking for some way to relax (or procrastinate) this is the way to do it! Although I sometimes spend hours (oops did I just admit that) on these photo journals, I always close my computer lid with a smile. The endless pictures, quotes, and gifs are a “spoonful of sugar” for gray day. Next time you need some inspiration just refer to Tumblr, the never ending slideshow of heartening photos.
