I decided to make a make a fun dessert to celebrate the kids’ first semester report cards. We are so proud of their hard work and nice comments from all their instructors. Inspired by my friend, Nancy’s, delicious brownie recipe, I made a few additions and created this yummy peppermint brownie dessert.Using one of my stash of Ghiradelli Brownie mixes, I made the brownies according to the package directions, adding 1/4 tsp. peppermint extract to the mix. Bake and let cool completely. Make peppermint frosting and spread on cooled brownies. Sprinkle with crushed peppermint candies and place chocolate truffle candies on top.Peppermint Frosting recipe:
2 tablespoons softened butter
1 cup powdered sugar
2 tablespoons half n half, heavy cream or evaporated milk
1/2 teaspoon peppermint extract
